Maker Notes: Each varietal for this sparkling was picked and fermented separately. The Pinot Blanc was fermented in tank, and the Pinot Gris was barrel fermented and aged. The Gamay juice was pulled (saignée) immediately after filling the tank with berries to limit colour transfer.
