Farm Notes: Sheehan Farm - Washington

Maker Notes: Picked at lower Brix and higher acidity to highlight the vibrant character of the Gamay, the berries were destemmed and gently crushed before being transferred to tank. Fermentation lasted seven days in two separate tanks, with twice-daily pump-overs and distinct yeast strains used in each to enhance unique flavour profiles. After pressing, portions of the two lots were carefully blended to produce a bright and crisp Gamay with lively freshness.
