Created alongside the Appassimento from air-dried Merlot, the Ripasso is lighter and drier.
Tasting Notes: This rich garnet wine shows a complex nose of plum, violet, blackcurrant liqueur, and baking spices. Warm and developed on the palate with cherry, berry, and subtle oak spice.
Farm Notes: Created using the passito method of air-drying our premium Merlot grapes (used for Silica and Alluvia), we first use the raisined fruit to create our luscious Appassimento. Then the potent Appassimento grape skins are mixed with fresh merlot juice to create a second fermentation (or a “re-pass.”) The resulting Ripasso wine is rich, highly textured, and assertive, while holding less sweetness than the original Appassimento.
Macerated dark fruit flavours lend a perception of sweetness to this dry wine, which also shows smooth dark chocolate tones and well-integrated tannins that build texture and body without presenting as overly dry. Smooth and supple.
Food Pairing Notes: Pairs beautifully with gnocchi, wild mushrooms, or creamy cheeses.
