Maker Notes: The Pinot Gris was fermented in stainless steel tanks using a yeast strain specifically selected to enhance mouthfeel and creaminess, distinct from that used for the Village tier. Post-fermentation, 45% of the wine was transferred to neutral oak barrels for sur-lie aging to develop texture, while the remaining portion remained in stainless steel. After nine months of maturation, the barrel-aged and tank-fermented lots were carefully blended to achieve a harmonious balance of softness and elegance.
