Maker Notes: To keep the colour delicate, Pinot Noir and Gamay grapes were whole-cluster pressed before being co-fermented in stainless steel. After fermentation, the wine was racked off the lees and aged in stainless steel to preserve its fresh, vibrant character. A small portion of our sparkling base was then blended in to elevate the acidity—adding just a touch of Chardonnay (2%) to the final blend.
