Awards Notes: GOLD MEDAL 90 points: 2025 Seattle Wine Awards

90 Pts. John Schreiner - This cider was made with hand-pressed juice from cider apples. It was fermented in stainless steel and neutral French oak barrels, with secondary fermentation in the bottle. Locally-sourced hops were used for the dosage. This golden-hued cider has aromas and flours of apple with the complexity of a hops note on the finish. 90. 88 - Michael Godel Unique cider combination here, putting hops with apples for something most of us have likely never tried. Makes for the driest of the offerings with a hemp note and a verdancy that’s hard to compare with any other savoury aromas. Also seems to accentuate the terpene elements in the apples. Almost smells like sauvignon blanc mixed with Normandy pear cider. Quite unusual and so intriguing. Tasted March 2025.


Tasting Notes: For those who like it dry and complex, Knotty Apple & Hops Cider brings the perfect balance of sass and sophistication. Locally sourced hops add a flirtatious floral and citrus twist to apples. Secondary fermentation gives it a soft, bubbly mousse that dances across your palate. This cider’s lightly hopped, aromatic profile will leave you yearning for another taste—bold yet refined, with just the right amount of edge.

Farm Notes: 40 Knots Salish Sea, Glacier deposit, sandy gravelly marine over sandy gravelly morainal leading to Schist clay. Traditional sustainable farming methods, no herbicides, no pesticides, limited irrigation.

Maker Notes: The Art of Knotty Cider We started by selecting apples at peak ripeness—because only the best would do. Then we hand-pressed them… Did I stutter? Nope. We actually did that, because if you want to capture every last drop of flavor, there’s no cutting corners. Next, we aged this beauty in a mix of stainless steel and Burgundy neutral oak barrels—because balance is key, and we like a little finesse with our funk. And when we decided it was finally time to tame the Knotty, we bottled it up for secondary fermentation, because a cider this good deserves the Normandy-style treatment. Sophistication was the goal, and let’s be honest—it was the only real option. And then we waited. And waited. And waited. Because great cider doesn’t rush, and neither do we. Finally, when the time was right, we riddled, disgorged, and dosed it with local hops for that perfect finishing touch. The result? Delicious by Nature. Knotty by Design.

Food Pairing Notes: 40 Knots Knotty Apple Hops is crisp and refreshing with subtle hop bitterness. Pairs beautifully with cheese fondue, aged cheddar, Gruyère, and Alpine-style cheeses, much like a craft beer.
