After a strong start with good moisture, a warm May spell boosted vine vitality. Destem to bin ferment, cold soak skins for 4 days. Punch daily. Inoc Gamay and Pinot with classic D254. Inoc Cab Libre with BM4x4 to increase polysaccarides, bind green polyphenol. Press before cap sink, age all in stainless (Knotty I know), micro-ox Gamay on medium toast oak and Pinot in light to medium plus toasted oak. Blend and stablize.
