After ferment, the wine was aged in stainless steel. It begins with expressive red berry aromas (cherry, raspberry) echoed in the fruit sweetness on the palate. The wine is bright and lively.Tasting Notes: 40 Knots Gamay bursts with juicy ripe berries, balanced by fresh acidity, soft tannins, and a touch of spice and earthiness. Light- bodied yet vibrant, it finishes smooth and fruit-forward, making it perfect for pairing with charcuterie, roasted poultry, or simply enjoying on its own.Farm Notes: The 2023 vintage on the Comox Peninsula was exceptional, thanks to a favorable climate. After a strong start with good moisture, a warm May spell boosted vine vitality. Cooling temperatures and rain led to an early harvest, with careful hand-picking to ensure the best quality and capture the unique characteristics of each varietal.Maker Notes: What can we say, we got Knotty! Destem to bin ferment, cold soak skins for 4-7 days. Punch daily. Inoc Gamay with classic D254. Press just prior to cap sink, age all in stainless (Knotty I know), micro-ox at simulated altitudes ranging from Comox Valley to Mount Washington, in the presence of light-medium toasted oak. Blend and stablize. Very natural and traditional may produce tartrates. Bottle by hand, label by hand.
