Begins with aromas of green apple, lemon rind golden plums and clove. On the palate, there are flavours of apricot pith, sage and baked golden russet apples.

Delicate and balanced use of oak delivers salinity and freshness to the lingering finish, with just a hint of vanilla and spice.

Maker Notes: The fruit was hand-picked and destemmed, before being pressed into a combination of stainless steel (50%) and neutral French oak (50%) and fermented using a combination of indigenous and carefully selected yeast. New French oak was used prior to bottling to round out the texture and improve mouthfeel.
