Hand-picked and hand-sorted to ensure quality, the Chardonnay was then gently whole cluster pressed to minimize bitter phenolic extraction. Wild yeast kicked off ferment at 15C for 3 days before the must was racked into new French oak barriques and puncheons. After primary fermentation was completed, a malolactic conversion began, and a regime of daily bâtonnage took place until secondary fermentation was completed. 60% of the wine was aged further for 5 months in French oak, with the remaining component maturing in stainless steel to provide balance, freshness, and purity of fruit.
Farm Notes: This vineyard is located in Okanagan Falls, overlooking Vaseux Lake and McIntyre Bluff. First planted in 1990, it is home to a diverse collection of grape varieties and some of our favourite blocks. The soils feature mounds of glacially deposited rock with glaciofluvial sands and gravels.
Maker Notes: Delicate notes of orchard fruit, almond, and a kiss of oak are met with a line of fresh, citrus-tinted acidity. Notes of lemon, peach, and orange blossom fill the glass while the palate showcases pineapple, fresh bread, and a hint French oak spice. Shellfish or hard cheeses would pair well.
