A further two years in bottle before release ensure that while 2020 Summit has immense aging potential, it will deliver rich and sumptuous flavous immediately upon release, making it a rare wine for your most special occasions. 2020 was an excellent growing year, though highly limited with small yields, making this wine both increasingly desirable and scarce.

MW "By Jove" 2021Our first "Super-Okanagan", first basked in the sun drenched, sage scented slopes of the black sage bench. 85% Sangiovese with a dash of Okanagans most prolific grape thrown in for some balance, results in a wine that is truly unique here and anywhere else.

MW "Côt Blocked" 2021The black wine of cawston. Exudes blackberry & sweet tobacco with a hallmark violet note. Gorgeously aromatic and light on its feet for a wine of such modest depth.

OV Cabernet Franc Merlot 2019Hand picked clusters were de-stemmed and then hand sorted at the winery ensuring only the best fruit was used for this blend. The wine was left in barrel in its individual components for 9 months and then blended together for a further 14 months of elevage. New and neutral oak barrels were used (80% French and 20% American, 28% of which was new). The wine was then blended into tank where it aged an additional 2 months.

New and neutral oak barrels were used (80% French and 20% American, 28% of which was new). The wine was then blended into tank where it aged an additional 2 months.

OV Cabernet Sauvignon 2020This Cabernet Sauvignon is from the southwest corner of this vineyard, which is one the warmest pockets in BC. The 2020 vintage produced ripe, concentrated fruit which places the profile of this wine further from the Left Bank of Bordeaux and nearer those of Washington State, with dark, opulent fruit backed by present yet ripe tannins, with a pleasing, sumptuous, and persistent finish. For best results, open from 2025-2030.

OV Chardonnay 2022Hand-picked and hand-sorted to ensure quality, the Chardonnay was then gently whole cluster pressed to minimize bitter phenolic extraction. Wild yeast kicked off ferment at 15C for 3 days before the must was racked into new French oak barriques and puncheons. After primary fermentation was completed, a malolactic conversion began, and a regime of daily bâtonnage took place until secondary fermentation was completed. 60% of the wine was aged further for 5 months in French oak, with the remaining component maturing in stainless steel to provide balance, freshness, and purity of fruit.

OV PTG 2021PTG is a long standing Burgundian acronym for a practice called "passetoutgrains", which loosely translates to "throw all the grapes in". This field blend of Pinot Noir, Gamay Noir, and Pinot Gris were crushed into tank together where they underwent full Carbonic Maceration (natural fermentation under a blanket of CO2). This technique provides a fresh, fruit- forward, and lighter style red wine. It then spent 6 months in second-use French oak puncheons where the various components were able to fully integrate, creating a polished, intentional example of the style.
